- 1/2 cup butter, softened to room temperature
- 1 cup pure maple syrup
- 2 eggs
- 1 1/4 cups pumpkin puree
- 1 teaspoon Simply Organic Vanilla Extract
- 1 1/2 cups whole wheat pastry flour
- 1 teaspoon baking powder
- 1 tablespoon Simply Organic Pumpkin Pie Spice
- 1 teaspoon Simply Organic Cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup chopped pecans
Directions
- Preheat oven to 350 degrees. Line a loaf pan with parchment paper.
- In a large bowl cream the butter, maple syrup, eggs, pumpkin, and vanilla.
- In a separate bowl, with a wire whisk, mix together the flour, baking powder, pumpkin pie spice, cinnamon, and salt. Stir in the pecans into the dry mixture.
- Fold the wet ingredients into the dry, until just fully incorporated. Do not over mix. Spoon into the loaf pan. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
