Organic Gluten Free Pumpkin Cake



Ingredients


Cake
  • 2  large eggs, slightly beaten 
  • 2 tablespoons water 
  • 3/4 cup pumpkin purée (approximately half of a 15-ounce can) 
  • 1 package Simply Organic Pumpkin Cake Mix 
Frosting
  • 3/4 cup pumpkin purée (approximately half of a 15-ounce can) 
  • 3 cups powdered sugar 
  • 1/4 cup cornstarch
  • 1 cup sour cream 

Directions

Cake:
Preheat oven to 350 degrees. Grease bottom of an 8- or 9-inch round cake pan.

Combine eggs, water, and pumpkin in a mixing bowl. Add contents of package. Stir until mixture is evenly moist. Pour into prepared cake pan.

Bake for 30 to 40 minutes, or until center tests done with a toothpick or knife. Do not underbake. Cake should begin to pull away from sides of pan. Cool, loosen edges, and turn onto serving plate.

Frosting:
Blend all the frosting ingredients together. Transfer to a medium saucepan. Heat on medium-low until desired thickness is reached, approximately 5 minutes. Chill. Frost cake when cooled.
